Coffee Friday, “Selfie” Saturday, Sunday Set Ups

Goooood morning all! How was the weekend? Fantastic? I sure hope so!

Also- Happy St. Patricks Day! I love this holiday. Must be the Irish in me? 😉

This weekend for me was spent mostly getting organized and doing some much needed wedding stuff. Shane left on Saturday morning on a trip to Las Vegas and won’t be home until Wednesday, so the story will be much the same for the rest of the week. I miss him a lot, not to mention that fact I’m insanely jealous, so keeping myself busy is/was the best way to deal with it- or such was my logic going into the weekend.

Friday, I finished up some work and tried to get some things organized going into this week. I also (of course) had to stop for the customary celebratory coffee for Coffee Friday!

Friday night, I stayed in and ended up going to bed pretty early…I had some fun plans for early the next morning!

Saturday around 7:30a.m., downtown Wichita was overrun with people in green t-shirts, tutus, crazy beards and all sorts of other fun costumes! This girl wasn’t much into the dressing up aspect- but that didn’t stop Rachel (one of my oldest friends, and one of my bridesmaids) from getting in on the crazy sock/tutu train.



She’s a kook. 😉

I met up with Rachel and her sweet roommate Megan bright and early to “warm up” for the annual St. Patricks Day 5k run/walk. It was a little chilly when we first got there, but by the time the race started (we definitely went in the second wave…no 6 minute miles for me, thanks.) the sun was up and it got warm pretty quickly! I also happened to have double layers on, so I was fairly toasty by about mile 2.

It was a lot of fun, and a great way to get up and moving early on a Saturday!

After I went home and showered up, I got in the car with my parents and we headed out to nearby Winfield to watch the matinee performance of my little cousin in his high school’s Broadway variety show. The show was really great- that school packs a whole lotta talent, let me tell you- but unfortunately, I think my cousin was actually coming down with a case of strep throat during the actual performance. His voice was so gone and his throat hurts so badly that he didn’t even get to sing his lead song or dance. I was so bummed, and I felt horrible for him- he looked like he was in a lot of pain and I can relate to having worked so hard on so many rehearsals and then have to bow out of a performance. It’s the worst. 😦

On Saturday night, I met up with a good friend of mine and we had dinner and chatted for almost 3 hours. It was a much needed, very relaxing evening.

Sunday, my dad offered to take me to the Lego Movie. So- duh. We went.



It was every bit as cute as I expected it to be, and I can happily relax now that I’ve finally seen it!

Of course, last night was also Selection Sunday for the upcoming NCAA tournament. I watched to see where all 3 of my state’s teams would land- WSU is a 1 seed in the Midwest region, K-state is a 9 seed in the same region and KU is a 2 seed in the South region.

All I have to say is that if you take one look at the Midwest region you can see that the committee is clearly making a (not so nice) point to WSU here, and Charles Barkley agrees with me.


But I’m not phased- and neither are the Shox. 😉

I have a cross training (maybe kickboxing?) workout as well as a back and biceps session on tap for today after I do some work. Have a fantastic Monday my friends! (Don’t forget to wear some green! 😉 )

Another Challenge

Happy Martin Luther King, Jr. day! Did anyone have the day off from school or work today? It’s our busiest week of the month, so no such luck over here.

However, it’s also just a regular Monday! Are you guys ready and excited to start the new week off strong?

Just a warning- I won’t be able to post a whole lot this week. It’s our “production” week at work, and we’re trying to get the February issue of the magazine out. This means there will be some longer nights working, and if I want to fit in my workouts- which, ya know..I do- I’ll have to forgo blogging as often.

Before all that happens, I have a couple things to share with you all! Such as this magical purchase I made yesterday at The Fresh Market.


What you see above is an amalgamation of random “health” related food items- which are all bought in preparation for something rather exciting that’s starting up around here this week.

Chia Seeds.


Some delicious (or not so delicious) Kombucha.


I really love the Synergy one with chia seeds in it- the raspberry flavor is out of this world, and I personally really like Chia seeds in my water. The Organic Raw stuff on the other side, however, is a different story. While its choc full of good for me probiotics and other “living organisms” (no joke- it says that on the bottle) I don’t enjoy the taste and really only drink it for the purported health benefits.

However, I also bought something there that I really, really enjoy the taste of…


Some fresh ground Vanilla Maple coffee! Holy yum, this stuff is amazing. As if it weren’t enough that it’s fresh ground beans (which automatically make coffee taste better) the flavor itself is killer. Everyone at work kept saying it smelled like pancakes in my office today. It was the coffee- go figure.


I wish you guys could smell this through the screen. To. Die. For. Plus, this coffee here was ground fresh by my dad. He was pretty excited to try out the do-it-yourself coffee grinders at the market, and I have to admit he did a pretty great job.

Thanks for the dee-lish coffee, Pops!


Also, a side note- in case any of your were wondering, Percy Jackson was a major disappointment. No sea monsters at all.

I’m still a little upset.

No matter, however, because I have found several things to take it off my mind!

Like a self-motivated workout challenge, wherein I have to give Shane a dollar for every workout I miss or skip over the course of the next 4 weeks.

Each week, I tell him my workout total (goal), and at the end of the week if I haven’t reached that goal in the 7 days I’m given then I owe him a dollar for each missed workout.

Ooof. I may have over shot with my first number. Let’s just say I may end up pulling some unintended 2-a-days.

I’m also feeling pretty excited about this other idea I had for a challenge…this one focused on nutrition.

eat clean challenge

That’s right! I’ve decided to formulate a 4 week challenge for eating clean to go along with my no missed workouts challenge. I’m really excited about this one, mostly because I know as well as anyone that “abs are made in the kitchen”.

I’ve always been better about getting my workouts in then being a stickler about my diet. I might do really well for about a week or two, but I’ll inevitably break and start eating normally because I’m “working it off” in the gym. Well, if anybody else out there thinks like this, I’m sorry to tell you but that just ain’t gonna cut it.

Trust me. I’ve lived it for 7 years.

I’ve finally come to the conclusion that if I’m going to put a ton of work in during the day in terms of workouts and burning extra calories, then I really want to clean up my diet and feed my body the fuel it really needs. So, I’ve decided to “eat clean” for the next 4 weeks and see what kind of impact that has on my fitness goals and my workouts.

I’ll be tracking my food a lot more closely, so you’ll probably be seeing more “food photos” showing up here. It’s just as much to hold myself accountable as it is to show you the types of clean eating foods and recipes I’ll be trying out.

I’m feeling really excited about it, and am very pleased with everything I’ve put in my body so far today!

Breakfast- an egg. Just one “fried” egg (I cooked it in a skillet with some Pam, probably not “clean” enough).

Lunch- pb and banana protein shake.

Dinner- a piece of baked Tilapia with some seasoning and some broccoli.


Not bad for day one, right? 😉

Losing 2 Whole Days

Well hi there! Points to whoever can guess what inspired that title post. 😉 It seems like its been quite a while since I last stopped in to chat. 2 whole days with no post? Yeesh. It seems longer! There was a lot going on with work this week- we were on deadline for the Magazine.

Deadline didn’t mean that there was no Christmas fun to be had around then office, though! There was plenty of gift giving, white elephant exchanges and other goodies to be had. Some solid workouts were thrown in as well, along with a renewed 2014 goal.

So let’s get to the good stuff, shall we?


Earlier in the week, the wonderful and talented ladies that design our magazine put together and gifted us some pretty awesome gift baskets.



The little basket is super cute, and it was positively loaded with goodies!

A Starbucks Caramel iced coffee Via, plenty of candy treats (some super unique ones that I would have sworn no one else liked as much as I do!) and the best part- that gorgeous Starbucks gift card!

Did anyone else know that you can register your Starbucks gift cards and have them on your phone? You can reload them, get free coffees and get all sorts of other cool perks? The gift that keeps on giving!

There was also a delicious packet of Land o Lakes hot cocoa in there that I promptly tore into and shared with my mamma.


And that little candy you see there? That, my friends, is a mini Toberlone. YES- the very same candy we all came to know and love through FRIENDS. (Ya know, the episode where Joey wants the Toberlone from Ross’s girlfriend/fiance/wife/British lady, Emily?)


Yes, normally they are quite a bit larger. (Understatement?)  But this little baby was just perfect for me while sipping on some of that cocoa. YUM.

Alright, this goody basket wasn’t the only awesome gift I received this week! No, no…there was much fun to be had still.

On Monday, my coworker had a very fun gift for me. Check this out:



Isn’t that so cute? I thought it was hilarious. Because it’s true. My boss, my coworker and I go through coffee like it’s our job. Holy smokes, it’s insane.



Case in point- this very giant large black coffee that was absolutely necessary yesterday morning after our week on deadline. (I just love that sign- it speaks so much truth.)

She also had a wonderful book for me from author/mega-preacher/ motivational speaker Joel Osteen. It made for a wonderful gift and I love all of it! (Thank you so much, again! 😉 )

Yesterday, we had our staff/contractor Christmas get together. We all met for lunch at a local Mediterranean restaurant called Adrian’s for some good food and good company. We also had a “White Elephant” gift exchange that wasn’t really white elephant at all- all of the gifts were top notch!

I ended up snagging this gorgeous bottle of Moscato from one of our photographers. Does he have great taste in wine or what?



Moscato happens to be Shane’s favorite type of wine, so of course I took this with me last night when I went over to his house. We each tried a glass, and it was simply delicious.




And it’s from Italy? No Barefoot or Yellowtail for us, no siree! (Let me just say that I actually adore Yellowtail, but my inner wine snob was very excited to have this pretty bottle to open up!)

It was a great get together, all in all. 🙂


Today, my dad had the job of Santa and delivered some gifts around to some of our family friends. When he returned home, he had some gifts in hand in return!

One of our good family friends always gives us the best home baked cookies and delicious Baklava- which she delivered beautifully on this year as well. However, there were some other things in the bag this year that had me super excited:



She got my mom and I both the gift of fitness! We have 12 Jazzercise classes that we can attend for free this winter- and I am super pumped!



While I’m totally into my strength training and stair mastering right now, you can never go wrong with trying out some new exercises classes. I danced for 14 years (from when I was 3 until I was a Junior in high school) and dancing is in my blood. I’ve always been a Zumba fan (despite the fact that I don’t feel like it gives me quite the burn other classes do), so Jazzercise is right up my alley. It will be a great addition to my current program!

I’m loving all of these thoughtful, hilarious and exciting gifts so far this season! Have you guys gotten any exciting gifts yet?



I can’t remember if I mentioned this already or not- but Tuesday’s workout was a 30 minute leg session and a 40 minute stair master workout.

Wednesday was a rest day.

Thursday was an “A.M. Fat Burner” workout from my old pal, Mike.

Friday was a 40 minute back/triceps/biceps workout and a 35 minute cardio session on the stair master.

Today (…here in a little bit, as soon as I get off the computer) is a P90X workout of my choice. So that has yet to be decided! I’m leaning towards either Kenpo or Cardio x…but I’ll be sure to let you guys know!


Alrighty then, I have a bunch of stuff to get done today! It’s supposed to get really icey and snowy (probably right as this is posting, since it’s a sneaky scheduled post 😉 ) and so I’m anticipating being slightly snowed in today.

I really, really hate ice. And snow. Mostly because it keeps from doing things I want/need to do (like having lunch with friends and cuddling with my fiance), but also because it’s just such a hassle.


I have some Christmas gift wrapping, some organizing, meal prepping for next week, workout scheduling for next week- and, some very special Christmas baking to do!

Know what that means?

YES– I’ll have a brand new recipe for you, coming up tomorrow! Can you just feel the excitement?



Adventures in Coffee

So remember this morning when I said I needed coffee?Well, that turned out to be more difficult than anticipated.

Right before I was about to leave for work, I got a pone call from my co-worker reminding me of something terrible.

We are all out of Keurig cups at the office. The horror!

So, I set out to find us a good cup of coffee from the coffee shop down the street. Ie- Starbucks.

Well, if any of you have ever tried to get in line at Starbucks at 8am on a weekday morning then I bet you can guess what kind of line we were working with today.


Granted, I could have just gone in. But it was way too cold out for that noise.

So I drove up the street a ways to the other Starbucks location and, wouldn’t you know it, that line was clear around the building. Needless to say, at this point I was feeling ready to go coffee-less.

But then a wonderful thing happened.

I pulled up into the itty, bitty Scooter’s drive through window and low and behold- no line. None.

Thank the Lord.

So this little lady did end up getting her coffee after all.

Disaster averted.

Well I’m about to wrap things up around these parts and head to the gym for my favorite dinner time workout! On tonight’s agenda is a chest and triceps strength workout + the squats I didn’t end up getting to last night.

Then I’m feeling like a little of that Stair Masteraction from yesterday might be necessary- have a great night!

A.M. Dates and “Proat-meal”

This morning, I had a date with an old friend.

Unfortunately, I stood my date up.

My bed was just feeling too darn comfy to leave it! And getting up anywhere between the 5am – 6am window can just feel downright horrific some days.

So I gave myself permission to sleep in (I had done all breakfast prep work the night before) and didn’t get up until 7:15. Of course, then I was rushed to get ready, didn’t have time for a cup of coffee and ran out of gas on my way into work.


However– like I said, I managed to do most breakfast prep last night, so all I had to do was open up my container once I got to work and stir. Also luckily, there is a coffee pot here at the office and I was able to brew up a whole batch of fresh coffee as soon as I got here this morning.

Hello, gorgeous….

In other news, breakfast this morning came in the form of overnight pumpkin “proatmeal”, complete with half a banana and extra almond milk on top.

—See that massive cup? Shane bought this for me last year. It’s amazing. Oh, and you can definitely double the amount of coffee you see here.

In today’s oats:

-1/2 cup oats

-1/2 cup almond milk

-1 tbs. peanut butter

-1 tbs. agave

-1/4 of a scoop of VCORE vanilla bean protein powder

-1 1/2 tbs. pumpkin puree

Guys- I know they aren’t pretty. But they taste DELICIOUS.

In other news, I’m hoping to head straight to the gym after work today. I have to train arms and shoulders, and since the gym closes early on Fridays (6pm), I planned accordingly and have my handy dandy gym bag all set and ready to go out in the car.

I also have this thing in my head where at some point, I plan on having a pair of workout shoes from every brand. So far, I have Nike, Asics, Reebok and Adidas covered. Next on the horizon- some pr-etty snazzy POLO tennis shoes I found online.

Hopefully I can snag them up before the “free shipping” promise goes away! 😉
